What Year Did the Chocolate Covered Cherry Come Out?

The word cordial begins with the word ‘Cor’. Besides being a Latin word for Heart. The word cordial, as a Latin noun, means medicine. Or medical food. Or drink given as a tonic. In fact, cordials were known to stimulate the heart. And improve circulation.  Indeed, the desert was not candy in England around the 1400s. They were taken after big meals. Or feast to settle the stomach. Also known as ‘Surfeit Waters’, they were to aid digestion. By the 1700s, they were known for their uplifting effects.

Then the cordials were known as cherry cordials. Or another name, griottes. First popular in the Comte Region of France. In the 1700s. In America, cordials were known as strong liqueurs. Indeed, it is made by crushing whole cherries. Including the pit of the cherry. Also steeping them with sugar syrup. And a little bit of alcohol. This type of cordial is a powerful, thick, syrupy alcohol with a strong fruity flavor. Perfect for a sweet after-dinner drink. Then France’s version of Cordials made its way to America. Now known as the chocolate-covered cherry. Can be made with alcohol. Or most popularly made without. And the choice of filling or just a cherry in your favorite chocolate.

In 1864 the candy company Cella’s began making Cherry Cordials Candy. By 1929, they were making them in large amounts. And the Brock Candy Company began making cherry cordials in the 1930s. Being one of the main sources of income for the company during the Great Depression. In fact, the cherry candy was a big success for the Brock Candy Company. The company’s name was later changed to Brach’s. After E.J. Brach Corporation bought the candy company. The turning of the chocolate-covered cherries. One of the largest chocolate cherry companies.

  • Maraschino Cherries:36 cherries (with or without stems) – I like to use the Marachio Cherries in a Jar. And without the Stems. Indeed, it reminds me of the candies you can buy in the store. But you can use the ones with stems. In fact, they do make dipping easier. And you could probably use fresh cherries. I just never have.
  • Butter: 3 table spoons, softened You can use salted butter for that contrast in your chocolate. But you can use unsalted butter. Or even sweet butter may work. In fact, Sue Chef Smith prefers salted butter for baking candies.  
  • Corn syrup: 3 table spoons of White Corn Syrup. You can use light corn syrup. Or a Sugar Free Corn Syrup to cut back on the sugar in take. And keep the sweet treat, yummy.
  • Powdered Sugar: Also known as Confectioners Sugar-2 Cups Sifted.
  • Chocolate:18 Ounces (1 ½ bags). You can use Milk Chocolate. Semi-Sweet Chocolate. Or even some White Chocolate for a unique twist. We use Dark Chocolate to add a few healthy heart benefits to the table. Indeed, this is your treat. In fact-any of them should work out Great! 
  • Coconut Oil: 1 Teaspoon
  • Paper Towels:For dabbing the cherries
  • Wax paper: to line baking sheet
  • And Time: Indeed, you will need time. The steps are simple. But, time-consuming. So, pour your self a Fine Glass of Wine. And Enjoy the Fun!

Equipment Needed to Make Chocolate Cherries

  • Mixer: A hand mixer. Or a stand mixer will work. Besides, You will need this to make the “dough’. So, that you can wrap the cherries in.
  • Microwave safe bowl: So, you will need this to melt your favorite chocolate.
  • Fork: Indeed, you will need one to remove the dipped cherries from the chocolate.
  • Airtight container: While this is for storing the cherries. Indeed, you can get as creative with this as you would like. In fact, we like to decorate mason jars to store. And give them as gifts. Also, you could buy some really neat boxes online. Or just put them in a zip-lock bag. And hide for yourself.
  • Baking sheet: Or cookie sheet.

How Do To Get the Liquid Fill Center Into the Chocolate Cherries.

1. Place the butter. And corn syrup in your bowl. Then Slowly add in the powdered sugar. One cup of sugar at a time. And mix until a dough forms.
2. Refrigerate dough: for a few hours until it stiffens. So, it is easy to work with.
3. Then prepare your cherries. By removing them from their juice. Also, dry them on a paper towel.
4. Then, take a piece of wax paper. And place it on a baking sheet. Besides, this is where you will place your cherries. And allow them to harden.
5. As you take about 1 tsp of dough. Also, roll it out thin. And wrap the dough around each cherry.
6. Then, Place them back into the fridge for about 1 hour. Also, This will make it easier to dip them in your chocolate.
7. As you place your favorite chocolate. And the coconut oil into a microwave safe bowl. Then melt for 30 second increments. Stir and place back in the microwave. Until they are completely melted.
8. While you take each cherry. And drop it into your chocolate. Indeed, This part is easier if you choose cherries with stems. But if you do not want the stems. Then place your cherry in the chocolate. And remove with a fork quickly.
9. After you allow the chocolate to harden. Then You can place them back in the refrigerator to speed up this process.

Storing Your Chocolate Cherries is Where the Fun is!

10. After your cherries are set: Place them in an air-tight container. And store in a dry place. Perhaps the pantry. Let your cherries sit for about two weeks. Indeed, this is the least amount of time I would choose. But if you make them set for four weeks. Indeed, the longer they set. In fact, the more the inside will liquefy. Gifting you that perfect chocolate covered cherry! Then you can keep them out for up to six weeks. And they will still be a Great Sweet Treat.

11. So, some helpful advice. Indeed, No Freezing the cherries. Because the chocolate will freeze. And crack the chocolate. As well as making the filling ooze out and freeze. Also, they will not turn out the way you want them to. Even though they will still taste Great!
